It’s that time of the year again, the perfect excuse to dress and up feel like a kid! As adults, we may no longer be welcomed trick-or-treating, but why let the kids have all the fun? Personally, I’m planning on making these devilishly tasty Halloween candy apples, and dressing up. Why no make a batch and join in on the festivities, children and adults alike! Halloween Candy Apples
Cooking time: 20-25 minutes plus prep time
Makes: each recipe makes 8 apples
Ingredients
Candy Apples
8 small apples, un-waxed is best
400 g caster sugar
3-4 tbsp. glucose syrup
1 tsp. white vinegar
100 ml water
Few drops of red food colouring
8 forks or lolly sticks
Spiked Apples
8 small apples
400 g caster sugar
3-4 tbsp. glucose syrup
1 tsp. white vinegar
100 ml water
A few drops of red and blue food colouring
3 ½ tbsp. crème de cassis
½ tsp. ground cinnamon
8 forks, lolly sticks or cinnamon sticks
Poisoned Apples
8 small apples
400 g caster sugar
3-4 tbsp. glucose syrup
1 tsp. white vinegar
100ml water
3 ½ tbsp. rum
6-8 whole star anise
½ tbsp. vanilla paste
A few drops of black food colouring
8 forks or lolly sticks
- Start by rinsing your apples, using hot water if you’ve got waxed apples, as the wax will make it hard for the candy to stick. The remove stalk and insert fork, lolly stick or cinnamon stick into the top of the apple.
- Place some grease proof baking paper onto a plate or work surface.
- Place your sugar and water into a small, deep saucepan and pop over a medium heat. Let sugar dissolve, wiping down the sides of pan with a wet pastry brush to remove any sugar crystals.
- Once sugar has dissolved, add your vinegar and spices and 2 tbsp. of alcohol if making spiked or poisoned apples, and stir in.
- Bring to a rolling boil and stop stirring. Leave until sugar has come to hard candy consistency (not tacky or sticky when cool). To test this, try popping a little into water or into the fridge. This will take about 10-15 minutes but do keep an eye on it, as sugar burns easily.
- When ready, add the food colouring and the remaining alcohol. Then you’re ready to coat your apples! Dip whole apple into mix and allowing excess to run off before placing on baking paper. Let cool before eating, best enjoyed on the day!
